Ohhh avocados...we’ve had a love affair for a long time and the flame is as strong as its ever been. If you aren't eating avocados on the regular you should probably take a good, hard look in the mirror.
Avocados are full of cholesterol-reducing healthy fats, they have more potassium than a banana, they're loaded with fiber and a great source of various other important nutrients. It's hard to believe they can be so healthy and taste so good.
Besides guac and avocado toast, there are countless other creative uses for them: ice cream, salad dressing, chocolate pudding, smoothies, pie, soup, grilled, pickled, whipped, fried...to name a few.
Buy unripe avocados (hard, bright green) if you're not planning on eating them right away. Once they are ripe (softer, dark brownish), you can store them in the fridge to last another week or so.
