VEGAN LENTIL SOUP
WHY THIS MADE THE CUT
Legumes, a class of veggies that includes beans, peas and lentils, are among the most versatile and nutritious foods out there. Plant-based protein at its finest! Except for the summer, it’s rare we don’t eat at least one bowl of lentil soup per day. Make a big pot once a week and toss it in the refrigerator. Reheats easy in the microwave and really fills you up.
- Bay leaf
- Lemon juice
- Vegetable broth
- Coconut cream
- Curry paste
This recipe is for a basic lentil soup but don’t let that fool you. The combination of these ingredients is more than the sum of the parts. There’s nothing more comforting than a warm bowl of lentils in the winter. Once you’ve mastered this basic recipe, experiment with adding coconut cream and curry spices, it’s one of our favorite variations.
- Saute veggies - Heat up a soup pot with a little oil then add the onions, carrots and any other optional veggies you’d like.
- Add broth - Water also works if you don’t have any veggie broth handy.
- Add lentils - Sort and rinse them first.
- Add optional ingredients - If you’re feeling adventurous now is the time to toss in any other optional ingredients.
